I’m very pleased with the quality of both the banneton proofing basket.  I put the basket in my oven with the light on and wow, the dough more than doubles in size. If you bake your own artisan bread both products will come in very handy.  The bread seems to stay fresh longer, but if it is going to take longer than say four days to eat the bread I would cut into slices and freeze it, so that you can enjoy it longer.
