This thing is PERFECT for smoking cheese! You typically have to have a cold smoker, or build one, to smoke cheese properly. Not with this jewel! Place the cheese in a casserole dish, place seran wrap on top of the dish, poke a hole into the plastic and place the nozzle, turn on the smoke and let it smoke the desired amount of time. I let mine smoke for 25 minutes and set it in the refridgerator for 2 weeks and it tastes AMAZING!!
