If you're unfamiliar with oolongs, be aware it's easy to use more tea than needed. You don't need more than 4 or 5 "chunks" to get a great cup of tea.
This Dong Ding is not as toasty as a the China Ding Dong. It is lightly roasted, and tastes more of a green tea, It does not have the fruitiness of Ti Kwan Yin, but has a fresh grassiness and a light floral flavor .There is nothing harsh about this tea. I use a little sweetener but tastes great without sweetener. It is delicious and has well-balanced flavor: astringent, sweet, grassy, floral, slightly tannic. After you brew it it brews a golden amber colour. I like mainland China Ding Dongs, but their flavor is a bit murky compared to this. I'm certain there are those who prefer the Ding Dongs from China, but I prefer this.
