We bought an Anova Sous Vide cooker an dtried to use a pan with an opemn lid. The water woudl evaporate to quickly on lonhg cooks. Bought this and it solved that problem. Fits our Anova perfectly, lid fits tight and rthe racks do come in handy. 12 quarts is enough for us to cook all we want.
