I like to keep my knives sharp and thus I am always on the lookout for a product that can do it quickly and easily and not leave me honing things on a whetstone when I need something sharp right now. I have ordered several different kinds of pull-thru sharpeners, hand sharpeners, honing sticks etc. The best I had found before this one was the Sharpening Shark, but this one even beats the Shark for knives. Hands down. I love that you can dial up different angles depending on the thickness of your blade. I have never seen that on this kind of sharpener before. It really won me over with the scissor option, too! The instructions tell you to open the blades and put the scissors in up to the crease, then draw them back as you squeeze them closed...however I could not do that easily, so I put the tip of the scissors on the sharpening element and pushed them forward to the inner crease while holding a little pressure on them, and they are now razor sharp. I would not use this item to sharpen extremely expensive Cutco-level blades, myself. It is clear this thing is the boss and is goint to take hold of your blades, form and sharpen them in a regimented way that you can easily maintain yourself. I will say, for older or cheap knives, this will give them infinite new life by virtually remaking the blade edge and keeping it honed (and allowing you to sharpen them up on a moment's notice.) My 25 year old cleaver that I could never quite get the angles right on a whetstone to be sharp from end to end, is now as-new. I even very lightly ran through some serrated blades in the fine setting and they are also 10x sharper now. As someone who cooks A LOT and has any number of good quality older knives that just need a little love, I could not be happier with this purchase!
