This is a fantastic paring knife and it is very sharp. It's a VG10 Damascus steel blade with 73 layers of cutting power. 60+ HRC so this edge should not dull easily as long as you don't use on hard surfaces or bone and it is recommended to hone weekly. I always cut on a cutting board to preserve my blades. It looks great to with it's widen insert handles and a mosaic center pin/ decorative piece. It's balanced well and I'm sure it will last years to come. It cuts like a breeze through tomatoes easily making very thin slices you can see through thin. I tried it out on a carrot and it wasn't a problem at all. I'm extremely impressed with the performance of this knife and it razor sharp edge. This is with out a doubt one of the best kitchen knives I've ever owned. I just love the look of the Damascus layers, it really is beautiful and quite functional. I'm positive that you would be as impressed as I am with this magnificent piece of cutlery. And I believe it's affordable for what you get. Through out all those other paring knives that promise so much but deliver little satisfaction and use this little gem that promises quality and delivers it. I'm so glad I bought this amazing knife and I will be buying more of this brand.
